Whether you follow a paleo or vegan diet, this walnut sun-dried tomato pate is easy to make. It’s for a perfect snack or lunch idea. Spread on gluten-free crackers, slices of cucumbers, stuffed into tomatoes or an avocado.

Ingredients

  • 1 cup walnuts
  • 1/3 cup sun dried tomatoes
  • 1/3 cup fresh parsley, chopped
  • 1 tbsp olive oil
  • juice of 1 lemon
  • 5 roasted garlic cloves
  • 4 tbsp water from soaked tomatoes
  • 1/2 tsp sea salt

Directions

  1. Soak walnuts in water for few hours
  2. Soak sun dried tomatoes in water for a few hours
  3. Roast garlic in oven- to roast garlic put cloves in aluminum foil, drizzle with olive oil and roast 400F for 40 minutes
  4. Drain walnuts and sun dried tomatoes (keep a bit of the water from tomatoes)
  5. Add all ingredients to a food processor and blend, if it is a bit dry add some of the saved water to moisten mixture

  1. It appears that the instructions for this recipe are incomplete. Should there be more than 4 steps, combining the ingredients?
