Gluten Free, Dairy Free Peanut Butter Chocolate Chip Cookie Ice Cream Sandwiches

Ice cream sandwich

Ingredients

  • 1 cup sorghum flour
  • 1/2 cup quinoa flour
  • 1/2 cup tapioca starch
  • 2 tbsp chiaseed in 1/2 cup water – let gel for 30 minutes
  • 1 tsp baking powder
  • 1/2 cup coconut oil
  • 1 cup smooth all natural peanut butter
  • 1 tsp pure vanilla extract
  • 1/3 cup maple syrup
  • 2/3 cup dairy free chocolate chips

Directions

  1. Mix all ingredients except chocolate chips in a food processor until mixture comes together.
  2. Add in chocolate chips and pulse a few times to combine
  3. Scoop out large balls and flatten into cookies on a parchment lined cookie sheet
  4. Bake 340F for 10-15 minutes
  5. Let cool
  6. Take 2 cookies and place a scoop Screamin Brothers frozen mocha treat inbetween

Ingredients

  • 2 cups almond flour
  • 1/2 cup applesauce
  • 1 ripe banana
  • 1/4 cup ground flaxseed
  • 3/4 cup natural smooth peanut butter or almond butter
  • 2 tbsp melted coconut oil
  • 1 tsp baking soda
  • 1/2 cup dairy free chocolate chips

Directions

  1. Mix applesauce and banana in a food processor
  2. Add in all other ingredients except chocolate chips and mix
  3. Add in chips and pulse
  4. Scoop large amounts onto parchment lined cookie sheet and flatten
  5. Bake 340F for 12-15 minutes
  6. Let cool
  7. Take 2 cookies and place a scoop of Screamin Brothers Mocha frozen treat in the middle to form a sandwich
