I don’t know about you, but I find breakfast the hardest meal of the day. I know how important it is to eat a solid, healthy breakfast, but sometimes I really wish I could not eat at all.

I guess when you add in food allergies to the mix it can become a little more overwhelming to know what to make yourself to eat especially if your mornings are hectic with getting to work or the kids off to school.

Whether you follow a Paleo diet or a Plant based diet, the question is always the same, what’s for breakfast?

Last night I made an amazing breakfast pudding and had it this morning for my breakfast. What fun it was to wake up to knowing I was going to eat pudding for breakfast.

This nutritious pudding is healthy and decadent. Made with quinoa, cashew butter and applesauce, you’ve got your protein and natural sweetness all rolled into one great tasting pudding, can’t beat that!

Why not give it a try and see if this pudding solve your breakfast woes….

Quinao Pudding

1/2 cup quinoa

1 cup organic apple juice

1 cup water

pinch sea salt

1 cup organic unsweetened apple sauce

lemon rind

1/4 cup lemon juice

1/4 cup cashew butter

1/4- 1/3 cup apple butter

1/2 tsp cardamom

Cook quinoa in water and apple juice for 20 minutes. Once done add in other ingredients and blend in a food processor until smooth. Put in fridge and enjoy.quinoa pudding
