Yummy oatmeal cookies that are gluten, dairy and egg free!

There is something about oatmeal cookies that just makes you feel good. Is it that it reminds you of being a kid, or the fact that you know oatmeal cookies are yummy and good for you at the same time? I wanted to make an oatmeal cookie recipe that would satisfy me and fill me up at the same time. I have a wonderful banana date oatmeal cookie recipe in my cookbook, Finally… Food I Can Eat that I love, but I wanted an old fashioned chewy oatmeal cookie – one that my 90 year old father would love, so I got into my kitchen and created this recipe.

I truly believe that both kids and adults will love these oatmeal cookies and they are perfect for families who have allergies or intolerances to gluten, dairy and eggs.

Adding in almond flour and flax seed adds protein and omega 3’s, making these oatmeal cookies a healthy snack or treat.

This yummy oatmeal cookie recipe makes 6 large cookies. If you have cookie monsters in your house like I do, you will want to double the recipe for sure.

Just so you know both my 90 year old father and my husband love these cookies and continuously ask me to make them.

 

Ingredients

  • 1 1/2 cup rolled oats
  • 2/3 cup almond flour or almond meal
  • 1/3 cup pure maple syrup
  • 1/3 cup ground flaxseed
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 cup melted coconut oil

Directions

  1. In a food processor mix oats, flour, flax seed, baking powder and soda.
  2. Add in syrup, and coconut oil and mix until mixture comes together
  3. Form cookies in your hand and press flat onto a parchment lined cookie sheet
  4. Bake 340F for 10 minutes
  5. Makes 6 large cookies

  1. SHIRLEY!!! These cookies are amazing! I can’t believe it – thank you thank you thank you! I didn’t have any flax on hand so I ground up Chia Seeds in my vitamix and it worked like a dream. Oh and this recipe is so easy, I made it with a baby snuggled in my arms (she won’t sleep anywhere else these days). I will be making these cookies in a regular basis!
