Martin’s Marvelous Granola Muffins

The other day a package arrived with tasty gluten free goodies inside.

A couple of packages of Martin’s Marvelous Granola and some of their Gluten- Free, Nut Free Cookies and Crisps.

Their products are made with pure oats ( non GMO that are grown in Canada), are nut, gluten and egg free and of course 100% natural.

Both my husband and I like granola, but I wanted to make something fun with this granola- something you could grab on the run!

Ingredients

  • 2 cups Martin’s Marvelous Granola ( pumpkin seed cranberry)
  • 1 cup pumpkin puree
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 3/4 cup full fat coconut milk
  • 2 eggs

Directions

  1. Mix dry ingredients in a bowl. Add in eggs and coconut milk and mix well. Allow to stand for a few minutes to let the oats soak up the liquid.
  2. Bake 350 F for approx 20 minutes or until done
