Maple Zabaglione

Easy to make dairy- free maple dessert that everyone will love

Maple Zabaglione

The sap is running and you have just been to the sugar bush, and purchased your yearly amount of maple syrup. It is fresh and light and you wonder what to make besides pancakes? Here is a wonderfully light dessert to make.



  • 4 egg yolks
  • 1/2 cup maple syrup
  • 1/2 cup dry sherry
  • 1/2 tsp pure vanilla extract


  1. In a double boiler under medium heat beat eggs and syrup. As it starts to froth up, add in vanilla extract and slowly add the sherry. Beat for at least 10 minutes until it becomes frothy and thick. Make sure the water does not boil underneath or it will cook the eggs too much.
  2. If you don’t have a double boiler, use a steel bowl on top of a large pot.

Place in a fancy dish and top with fresh fruit, chocolate shavings or eat as is. This maple zabaglione was a big hit with Eric the birthday boy!
