Key Lime Pie- Raw & Vegan

Try this delicious raw vegan key lime pie, your guests will love it- mine did

Key Lime Pie- Raw & Vegan

Crust 

Ingredients

  • 1 1/2 cups pecans
  • 9- 10 large medjool dates
  • 1/4 cup unsweetened shredded coconut
  • 2-3 tbsp melted coconut oil

Directions

  1. Mix ingredients together in a food processor adding coconut oil slowly until mixture comes together.
  2. Press mixture into a large 10 inch pie plate and set aside

Filling

Ingredients

  • 2 1/2 cups raw cashews- soaked overnight
  • 1 cup full fat coconut milk
  • 3/4 cup lime juice
  • 1/2 cup honey
  • 1 tsp vanilla powder or vanilla extract
  • 1/2 cup melted coconut oil

Directions

  1. Soak cashews in water overnight, drain and rinse
  2. Add all ingredients into a food processor and mix until smooth
  3. Spread mixture into crust and put in fridge for a couple of hours to firm up

Oh boy this pie did not last long in our house- even my neighbour had 2 pieces
