These kale chips with dairy free ranch dressing is a sure way to get your kids to eat kale!

I have to say that buying a dehydrator was one of the best decisions I’ve made in a long time. With a dehydrator you can make flax crackers and kale chips whenever you like. You can even set the timer and make your flax crackers while you sleep. I love my excalibur dehydrator, it’s the best money I have ever spent.

Ingredients

  • 1 bunch kale
  • 1 cup raw cashews
  • 1 1/4 tsp sea salt
  • 2 large garlic cloves
  • 3 tsp lemon juice
  • 2/3 cup water
  • excalibur dehydrator

Directions

  1. Soak cashews in water for a few hours, rinse and drain.
  2. Rinse and clean kale, remove stem and tear into large bite sized pieces
  3. In a food processor or blender mix cashews, sea salt, garlic, lemon juice and add water slowly as you mix. You want your mixture to be somewhat pasty but not too thick, nor too runny
  4. Put kale in a large bowl and pour cashew mixture over and mix in with your hands until kale is covered in mixture
  5. Spread onto dehydrator sheets and dehydrate on high for 2-3 hours until crisp
