I love granola either for breakfast or as a snack during the day- let me know what you think of this granola recipe in the comments below

Ingredients

  • 1 cup raw hazelnuts
  • 1 cup raw pecans
  • 1/2 cup flaxseed
  • 1/2 cup ground flaxseed
  • 2 tbsp chia seed
  • 1/2 cup pecan butter or other nut butter
  • 3 tbsp honey
  • 1/2 tsp pure vanilla bean powder
  • 1 tsp cinnamon
  • 3-4 tbsp melted coconut oil
  • 1/2 cup unsweetened shredded coconut ( optional)

Directions

  1. In a blender break up the nuts and flax a bit so they are in pieces
  2. Mix all dry ingredients in a bowl
  3. Melt honey, pecan butter and coconut oil together on the stove and pour over dry ingredients and mix well
  4. Place mixture evenly on a parchment lined baking sheet
  5. Bake 300F for about 30 minutes or until done
