Gluten Free Banana Seed Muffins

Seed Topping


  • 1/4 cup raw pumpkin seeds
  • 1/4 cup raw sunflower seeds
  • 1 tsp ground flax seed
  • 2 tbsp maple syrup
  • 1/4 tsp sea salt
  • 1 tsp cardamom



  • 3 ripe bananas
  • 3/4 cup coconut milk
  • 4 tbsp coconut oil
  • 1 3/4 cups almond flour
  • 1/4 cup hemp hearts
  • 1 tbsp baking powder


  1. For seed topping mix all ingredients in a small bowl
  2. For muffins put bananas, coconut oil, coconut milk in a food processor and blend until well combined. Add in the almond flour, hemp hearts, baking powder and mix
  3. Spoon muffin batter into oiled muffins tins and top each muffin with a tablespoon of seed mixture
  4. Bake muffins at 350F for 20 minutes
  5. Yields 9 muffins
