Chocolate Pumpkin Cookies

These Chocolate Pumpkin Cookies are gluten free, grain free, dairy free, and egg free. They can also be nut free, but don’t think that they aren’t delicious, because they are!

Loaded with fibre and healthy fats, this cookie with satisfy you and keep you going. I like to purchase organic pumpkin puree and I use Nuts To Your Organic Pumpkin Seed Butter. Check your local health food stores or healthy aisles as your grocery store to find these ingredients.

I had two of these cookies Chocolate Pumpkin Cookies for my breakfast the other day and I poured a bit of coconut milk over them and they were so delicious!

Ingredients

  • 2/3 cup pumpkin seed butter
  • 2/3 cup pumpkin puree
  • 1/3 cup pecans or pumpkin seeds to keep it nut free
  • 1 tsp ground cinnamon
  • pinch ground cloves
  • 1/2 tsp freshly grated ginger
  • 2 tbsp cocoa powder
  • 1/3 cup maple syrup

Directions

  1. Mix all ingredients together in a food processor
  2. Spoon out onto a parchment lined cookie sheet
  3. Bake 325F for 10-15 minutes
