Teff is not knew, it has been around for thousands of year. It is an ancient grain that hails from Ethiopia. Teff is also gluten free and makes excellent flour to use in pancakes and cookies.

Ingredients

  • 1 cup teff flour

  • 1 cup almond butter

  • ⅓ cup maple syrup

  • ⅓ cup pumpkin puree

  • 1 tsp baking soda

  • 2 tbsp ground flaxseed

  • pinch sea salt

  • ½  cup dairy free chocolate chips

  • ⅓ cup raisins

  • 1 tsp vanilla

Directions

  1. Mix ingredients in a bowl and form into balls.
  2. Place on a parchment lined cookie sheet and flatten slightly with a wet fork.
  3. Bake 350F for 10 minutes
