Cauliflower and Broccoli Salad

 

Ingredients

  • 1 head cauliflower, cut into flowerettes
  • 1 head broccoli, cut into flowerettes
  • 1 red pepper, diced
  • 1 orange pepper, diced
  • 1 yellow pepper, diced
  • 3 carrots, diced
  • handful fresh parsley, chopped
  • handful fresh basil, chopped
  • 6 tbsp olive oil
  • 2 cloves garlic, minced
  • 3 tbsp umeboshi vinegar
  • juice of 1 lemon
  • sea salt to taste

Directions

  1. Cook broccoli and cauliflower in hot water for 3 minutes
  2. Drain and rinse in cold water to stop cooking
  3.  Place in a large bowl and add in other vegetables.
  4. Mix in dressing ingredient and enjoy.
