Artichoke Avocado Salad

Ingredients

  • 1 can (398 ml) artichoke hearts in water, drained and sliced
  • 1 bunch kale, chopped
  • 12 cherry tomatoes, chopped
  • 1/2 red pepper, diced
  • 1 avocado, chopped
  • 3-4 green onions, sliced
  • 1/3 cup balsamic vinegar
  • 2/3 cup olive oil
  • 1 tsp mustard
  • 2 garlic cloves, minced
  • 1/4 tsp sea salt
  • pepper to taste

Directions

  1. In a bowl, mix together kale, tomatoes, artichokes, peppers and onions. In a small bowl, mix vinegar, oil, mustard, garlic, salt and pepper and pour over salad.
