A healthy dinner in 35 minutes

I often hear people say they just don’t have time to cook, and its much easier to pick up take out or order in. The problem with that is that drive through meals are not that healthy and can start to add up in cost and affect your health over time.

Tonight I decided to put myself to the test and make a healthy dinner in 35 minutes, less time that it would take to go out to the drive through or order in.

While grocery shopping earlier in the week I had noticed ground lamb on sale and picked up a couple of packages, one went in the fridge and the other in the freezer.

I always have salad fixings on hand ( kale, romaine, celery, green onions, avocado, cucumber, sprouts) and cabbage is a staple in our home as it is so versatile, healthy and inexpensive. This is the menu I came up with.

Ground lamb served over steamed cabbage with a side salad

1.5 lbs ground lamb

1/2 medium onion, diced

3 garlic cloves, minced

1 tbsp cumin

1 small tin or jar tomato paste mixed with 1 tsp arrowroot powder and 2 tbsp water

sea salt and pepper to taste

3 cups baby spinach

1/2 large purple or green cabbage shredded

In a large pot filled with water, boil cabbage for 20- 30 minutes until soft. Drain and set aside.

In a large pan with a little olive oil cook lamb and onions together for a few minutes. Add in seasonings, garlic and tomato paste mixture. Cook over medium heat until done, approx 20 minutes. When done add in spinach and let sit for a minute.

Cut up salad ingredients and toss with olive oil, sea salt and lemon juice.

Serve lamb over cooked cabbage with side salad, voila, dinner in 35 minutes
