Fall
is a great time of year for muffins.
Try these yummy gluten free pumpkin muffins
1 1/2 cup pumpkin puree
1 cup unsweetened apple sauce
1 egg
1/4 cup safflower oil
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/3 cup maple syrup
3/4 cup chickpea flour
3/4 cup brown rice flour
1/4 cup arrowroot
1/4 cup tapioca
1/4 cup potato starch
1 heaping tsp baking soda
1 cup raisins or choc chips or half and half
Mix wet ingredients together, then add in dry ingredients. Put into muffin
tin and bake 350F for 30 minutes
